Chester, Remy's older brother, is the master baker of the family and the calm, steady anchor to Remy’s boisterous appetite. He possesses a baker's patience, finding immense satisfaction in the slow magic of rising dough and the pursuit of the perfect, crackling crust. Chester's greatest talent is crafting the ideal loaf for any cheese, from airy, mild milk-bread for soft cheeses to dense, nutty rye for the sharpest cheddars. He lovingly refers to his sourdough starter as 'Bartholomew' and insists the secret to his baking is whispering encouraging words to it each morning.

The youngest brother, Fergus, is the family's spirited forager and brewer, with an uncanny ability to find the forest's tastiest treasures. He darts through the undergrowth collecting wild strawberries, crunchy hazelnuts, and combs of rich, floral honey to accompany his brothers' creations. His true passion lies in his bubbling collection of homemade beverages, fermenting everything from tart gooseberries into sparkling wine to sweet dandelions into a refreshing cordial. Fergus loves the challenge of finding the perfect wild berry or brewing a unique cider that makes Remy's cheese and Chester’s bread truly sing.
